This flavorful chicken soup is indescribably good. I came up with this recipe while trying to duplicate a delicious soup I had in Baton Rouge restaurant. It has as rich broth filled with savory vegetables, bite sized chunks of chicken and a little Cajun seasoning to give it an extra kick. Top it off with a handful of mozzarella cheese and serve with toasted French bread for a simple but wonderful meal.
