One of the most popular Cajun dishes in South Louisiana is Crawfish Etoufee served over rice. This recipe is in the traditional roux based style and like so many Louisiana dishes it relies on the "Cajun Trinity" of onions, bell peppers and celery to deliver that unbelievable flavor that good Louisiana cooking is famous for.
